Fried Tomatoes

Ingredients:

Coconut oil

2 tomatoes

2 eggs

2 cups of coconut flour

Salt and pepper to taste



Serves 4-6



1. Heat coconut oil in a pan over medium heat.

2. Slice tomatoes. Beat eggs in a bowl, then dip tomatoes in egg and coat with coconut flour.

3. Fry tomatoes in coconut oil until they are golden brown.
